IMHO I would say, yes, you can build a massive back without deadlifts.
Regarding what exercises you should do I would suggest all forms of rows. Cable rows, dumbell rows, barbell rows, and the like. Also, all forms of shrugs. Barbell shrugs, dumbell shrugs, and shrug rows(this may be called different things by different people. Basically, it is a dumbell or barbell shrug done while bent slightly forward.) Also, pull ups and pulldowns in their variations.
Folks, if I missed something here feel free chime in.

I'd add that not ALL forms should be done. Of those barbell bent rows are my favorite, but they are all good exercises. Same with the lat and trap exercises. To add to the list of possibilities, row shrugs can be done (shrugs on a cable row machine, where you keep your arms straight and shrug your shoulders back) as well as lat shrugs. Another one I like is reverse db flies
If you can, you should also squat... It'll help the lower back (or at least do back extensions).
I'm not a big fan of bent-over barbell rows. They require too much energy just to maintain the erect torso to where you can't put everything into the pulling action. I think Lying barbell or dumbbell rows are a better exercise.
Why hasn't anyone mentioned chins or pull-ups? These are one of the best back exercises.

Fred,
Hey thanks for chime in on my post. I appreciate any feed-back that I can get. Would you mind telling me why you wouldn't add all forms? Would that be too many exercises choices? I'm learning so any info you can provide is greatly appreciated.
leave your gym and never return. save your money, buy a bar and some plates and lift at home. you can do floor presses for upper body. give your gym the one finger salue and never return!

Will they allow RACK PULLS?? I'm gonna assume they don't want weights dropping on the floor for deadlifts. Rack pulls pretty much eliminates that.

I would like to add high pulls, good mornings, and chest supported rows.
Thanks.

Yes. My back got big just from doing barbell rows, a lot of them and nothing else.
